Easy Summer Protein Pasta
It was a blind experiment. It was time for lunch and we didn’t have a lot in the cabinet. I knew I needed to get more in me than just cottage cheese - that’s my easy go to. There sat a gorgeous heirloom tomato on the counter. Veggie- check. Then I found the box of Banza Chickpea pasta in the cabinet. Carbs- check. Pesto in the fridge, this is sounding like a beautiful combination. Fats- check. I didn’t really want to cook meat because I needed to get back to work. So… cottage cheese it is. Protein- check. I can just eat it on the side. Or… An experiment began. This could go terribly wrong or be something amazing. (Or an uneventful place in the middle.)
Easy Summer Protein Pasta:
56g Banza Chickpea Pasta - cooked to desired tenderness (about 8 minutes)
97g Cottage Cheese
8g Pesto
Heirloom tomato preferably picked fresh from the garden- other varieties or veggies will do as well.
Salt to taste.
Protein: 26g, Carbohydrates: 34g, Fats: 11g, Calories: 352. Solid meal.
